Shredded lettuce with scallion oil
Overview

Shred the lettuce.

Cut the white scallions into sections, cut the green scallions into rings, and prepare a little chopped chili.

Boil the water, add shredded lettuce and blanch it. (It doesn’t take too long to blanch my lettuce. It takes about 1 minute from putting my lettuce in the water to taking it out.)

Put the base oil in the pot, fry the peppercorns over low heat until the peppercorns turn black, take them out and leave the oil in the pot.

Add scallions and fry on low heat.

Fry until browned, remove the browned scallions and discard, and set aside the scallion oil in the pot.

Put shredded lettuce into a bowl, top with chopped peppers and green onions.

Add the scallion oil from step 7.

Add appropriate amount of salt.
