Alfalfa Egg Roll
Overview
There are many ways to eat alfalfa, it can be stir-fried or mixed. I use alfalfa, crab sticks, and fish tofu as stuffing, then roll it up with egg skin and cut it into sections. Such egg rolls are nutritious and delicious.

Prepare alfalfa.

Wash and blanch the alfalfa.

Remove and squeeze out the water and set aside.

Chop the blanched alfalfa and set aside.

Blanch tofu skin, crab sticks, and fish balls and set aside.

Chop the blanched tofu skin into small pieces.

Chop crab sticks into small pieces.

Chop the fish tofu into small pieces.

Put the various chopped pieces into a pot, add pepper oil, sesame oil, five-spice powder, salt, minced green onion, and minced ginger and stir to form a filling.

Put the pan on the fire, brush it with a layer of oil, pour in the egg liquid, and turn the pan to spread it out.

When the egg liquid on top is not completely cooked, add the mixed filling.

Roll up and fry until golden brown on both sides. Cut into sections when eating.
