First, rinse the fish scales thoroughly. You can add some cooking wine and salt to scrub them to remove the fishy smell. Drain the water and put it in a basin. Add two tablespoons of flour, one egg, appropriate amounts of salt, allspice, and pepper, and light soy sauce or a little oil.

First use chopsticks to mix well, then put on gloves and mix thoroughly with your hands so that each fish scale is coated with the slurry and leave to taste.

Heat oil in a pot.

When the oil is 60% hot, carefully add the fish scales. The fish scales will roll up after being put into the hot oil, so don't worry about them turning into lumps. Just use chopsticks to stir them a little after putting them in the pot.
