Remove the tail and older parts of the garlic, wash and break into small pieces with your hands, add a little salt, mix well, and marinate for 10 minutes.

Cut the tenderloin into shreds, add 1 tbsp cooking wine, 1 tbsp oyster sauce, 1 tbsp light soy sauce, pepper, and water starch, mix well, and finally add 1 tbsp salad oil, mix well, and set aside. Shred the ginger, slice the garlic, and chop the red pepper.

Heat the pan with cold oil, add the shredded pork and stir-fry.

Fry until the shredded meat changes color and set aside.

Leave oil in the pan, add shredded ginger, garlic slices, and red pepper and saute until fragrant.

Add the marinated garlic and stir-fry.

Add cooking wine, light soy sauce, and soy sauce and stir-fry evenly.

Pour into 1 small bowl of water and simmer for about 1 minute.

Add the fried shredded pork, add sugar, and stir-fry evenly.

Remove from pan and plate.
