Peel the onion, remove both ends and cut into cubes. Peel the carrots, remove both ends and cut into pieces. Peel and cut potatoes into cubes.

Pour oil into the pot over medium heat and fry the meat until it turns white. Add the carrot cubes, potato cubes, and onion cubes into the pot and stir-fry for 2 to 3 minutes with chopsticks. Add water to cover the ingredients in the pot, cover the lid and bring to a boil over high heat.

After boiling, use a spoon to scoop away any floating matter on the surface of the soup. Cover the pot again and cook over low heat for 15 minutes.

Turn off the heat, put the curry powder into the pot, and use the residual heat of the pot to dissolve the curry powder.
