There is a kind of freshness that is comparable to chicken essence, and there is a kind of freshness that does not require chicken essence. I like the freshness of river shrimp so much that I can’t help but buy it every time I see it.

Prepare ingredients for fresh river prawns.

Trim off the whiskers and feet of the river shrimp.

Heat oil in a pan, add chili pepper, Sichuan peppercorns, ginger, star anise, cinnamon, bay leaves, grass fruits, and cumin and stir-fry until fragrant.

Add river prawns and stir-fry.

Add appropriate amount of water and cook. When the water is dry, add salt, sugar, a little light soy sauce, and balsamic vinegar to taste. Drain the water and serve. (The umami flavor of the river shrimp itself is enhanced by adding sugar, so there is no need to add chicken essence in this dish.)
