Choose three-layer braised pork. Boil it in water first and then cut it into small cubes (put two ginger slices in the pot under cold water). You don’t need to cook it. Take it out and cut it into cubes. Take the pot and stir-fry the braised pork until it is golden brown.

After the meat is golden brown, add dried bamboo shoots, mushrooms and quail eggs

I prefer to use this kind of soy sauce, regardless of dark soy sauce or light soy sauce, just season it directly and pour at least half a glass of water into the pot

After frying, transfer all the ingredients to the casserole. The water in the casserole must be boiled before adding it, otherwise the cold water will shrink the meat. Putting on the prepared spices, I threw in a few jujubes, a little tangerine peel, and a little rock sugar (my family doesn't like sweet food, so I put less, mainly to make the meat more colorful), and simmered for an hour.

Before serving, add some more salt according to your personal saltiness, and garnish with chives and coriander. The meat is rotten and fragrant, not greasy, and the bamboo shoots are still crispy. Delicious! If you can't finish it, you can continue to stew it in the pot again. The more it stews, the more delicious it becomes. It can be served with rice or porridge.
