Overview

  1. Remove the heads, internal organs and scales of the off-shore fish and drain them.

  2. Pour a small amount of salad oil into the pan and when it is 80% hot, add the fish, turn to medium-low heat and fry until both sides are slightly brown.

  5. Cover and cook for 10 minutes. When the fish soup turns white, add chopped green onion, white pepper and winter melon slices. Cover and cook for another 5 minutes.

  6. Add the razor clam meat and cook for 2 to 3 minutes. Razor clam meat should not be cooked for a long time. Just add a pinch of salt. You can add chicken essence or not, the original flavor of the fish soup is already very fresh.
