Egg Broccoli Box
Overview
Almost all Chinese people know that the chive box is a household name and a delicacy of ordinary people. However, living in the white area, there are no bundles of leeks to buy, and it is far away from the Chinese market. I have grown my own, but there is no harvest yet, so I thought of ideas for the stuffing and changed the content. In fact, the box has to accommodate leeks, and You can change other ingredients, such as garlic sprouts, broccoli, spinach, Chinese cabbage, Chinese cabbage, etc., and then mix in vermicelli, fungus, and egg skin, and it will be delicious. I have made boxes with garlic sprouts I cultivated, and the taste is no worse than that of leeks. If some people don’t like the taste of leeks, just use the ingredients you like.

Steps
-
Soak the mushrooms and vermicelli in water, pick the western half flowers into very small buds, beat the eggs and beat well;
-
Blanch the broccoli and add 1 teaspoon of salt and 1 tablespoon of oil while blanching to give the ingredients a bit of flavor and make the dish brighter;
-
Put a little oil to moisten the bottom of the pot, fry the broccoli, vermicelli and mushrooms until dry;
-
Fry the eggs and pound them into pieces or fry them into pancakes and cut them into shreds, then set aside;
-
Put the flour in a large bowl, heat the water, and mix evenly with a spoon. When the dough is cool enough to touch with your hands, knead the dough with your hands until it is smooth (the dough is smooth, the bowl is clean and the remaining flour is smooth, and your hands are smooth and non-sticky). Then divide the dough into about 6 small groups (if you want it to be larger, you can divide it into 4-5 groups, if you want to be smaller, you can divide it into 7-8 groups), roll it into a thin round piece;
-
Put as much filling as possible on the dough;
-
Fold it in half into a semicircle and pinch the edges tightly. If you want to look more beautiful, you can cut off the uneven and protruding edges;
-
Hold the box in one hand, use your thumb to pinch out the edges from bottom to top, and lock the edges like a spring oil corner;
-
Place the pan on the stove, raise the heat to medium, put some oil in the pan, spread the bottom of the pan evenly with a spatula, then put the box into the pan, add 2-3 tablespoons of water, cover the pot and simmer for about 1-2 minutes, mainly to simmer the skin;
-
Then turn the heat to medium-low and fry both sides of the box until golden brown.
