Overview
When a large plate of red and fragrant chicken wings was served, I couldn't help but take chopsticks quickly. The tenderness of the chicken combined with the super spicy aroma slowly filled my mouth and throat. It was so refreshing!

Wash the chicken wings and chop into small pieces.

Take a large bowl, add 2 tablespoons of soy sauce, 2 tablespoons of cooking wine, and 1 tablespoon of sesame oil, mix the chicken pieces, and marinate for 20 minutes.

Spread marinated chicken wings evenly with cornstarch.

Heat an appropriate amount of oil in a pot until it is 70% hot, add chicken pieces and fry.

Fry until fragrant and golden red in color, take out and drain.

Stir-fry dried red pepper segments, Sichuan peppercorns, green onions, and ginger over medium-low heat until fragrant.
