Three Sauce Braised Pork Ribs

Life is like condiments, with mixed flavors that come and go. Condiments are also like life, with various flavors, sweet, sour, bitter, spicy, and salty, and endless combinations. Cooking is nothing more than combining several or more seasonings. The ingredients are the same, chicken, goose, duck, pig, beef, sheep, and eggs. Use them in turn, it depends on how well you mix and use them. This time, in order to make the ribs more delicious, I used bean paste, hoisin sauce and yellow sauce. The three sauces come together to create a delicious dish.

Crush 1 star anise with a stone chrysanthemum and set aside;

Mash the garlic;

Put the ribs in a bowl, add 1 tablespoon of light soy sauce, 1/4 teaspoon of salt, 1/2 teaspoon of dark soy sauce, 1/2 teaspoon of sugar, 1 tablespoon of cooking wine and chopped star anise, mix well with your hands, and let stand for 30 minutes;

Chop the pepper, ginger and green onion into pieces, put them in a bowl, put the minced garlic in the same bowl, and spread the four ingredients evenly;

Pour the spareribs in oil and don’t need to fry them for too long;

Place the pot on the stove over medium-low heat, add a little oil, add 1 tablespoon of hoisin sauce, 1 tablespoon of bean paste, 1 tablespoon of yellow soybean paste and minced pepper. Slowly push and stir with a spoon to stir-fry the sauce to bring out the flavor;

Change to high heat, add minced ginger, onion and garlic, stir-fry until fragrant;

Pour in the ribs, stir-fry a few times, pour in the stock (if there is no stock, add water), after the water boils, simmer over medium heat for 10 minutes;

Reduce the sauce over high heat until the sauce is thick. Serve on a plate. Sprinkle the fried peanuts evenly on the surface. OK.
