Overview
I just learned a dish from Brother Huo. I simmered it. It was tender and fragrant, spicy and refreshing. The green peppercorns were full of pepper flavor and tasted good.

Two pork loins, very dry and not moist.

Tear off the outer membrane and remove the waist.

First put 10g of salt, add some water to rinse, and then soak for half an hour (you can also directly rinse with running water for a few minutes).

Wash and cut one green bamboo shoot into strips.

Slice the ginger, smash the garlic, cut the green onion into flowers, and cut the green and red pepper into granules.

Heat 100g of oil in the pan, heat it up to 70%, add ginger, garlic, red pepper, then add green bamboo shoots and stir-fry for a while.

Add an appropriate amount of water to cover the vegetable noodles, add 10g of salt, an appropriate amount of pepper, and a spoonful of oyster sauce.

Add another 10g of salt into the pot, blanch the kidneys, and add water and starch immediately after they are cooked.

After boiling, take it out and put it on top of the green bamboo shoots.

Return to the pot and add 150g of cooked oil. When the oil temperature is 70% hot, add green peppercorns and green and red peppers. When fragrant, add an appropriate amount of chicken essence and immediately turn off the heat.
