Ingredients
Steps
-
Prepare the materials, soak the raisins in warm water in advance (the coconut filling is not patted, you can refer to my recipe for the method)
-
Mix high and low powder
-
Add salt
-
Put the sugar on the other side
-
Yeast on the side of the sugar
-
Put the egg liquid on the side of the sugar
-
Put the liquid last and pour the milk into the middle
-
Use chopsticks to stir into cotton wool, with almost no dry powder. Cover with plastic wrap and refrigerate for 20 minutes
-
After refrigeration, the dough became much moister
-
Pour it out and start kneading the dough. After kneading the flour into a ball, start kneading the dough. Knead forward with one hand and lightly grasp the other end of the dough with the other hand
-
Pull back a little and rub forward
-
After kneading it for about 5 times, roll it back into a ball. Knead it a few times and then continue kneading it
-
Knead for about 10-15 minutes, round the dough and check the smoothness; if the surface is smooth, your hands are smooth, and the board is smooth, you can proceed to the next step
-
Flatten the dough slightly, put butter in the middle, and seal
-
Start kneading the dough. After 2 minutes, the butter is almost absorbed, but the dough has not yet re-formed into a ball. You need to continue kneading
-
Once the dough is re-formed, start kneading it. Don’t knead it too hard, otherwise the gluten will break
-
Start kneading the dough, knead forward with one hand, and lightly grasp the other end of the dough with the other hand, not too much
-
Pull back a little and rub forward
-
After 10 minutes, make the dough into a round shape and start to check the degree of film formation
-
Cut out a small part, roll it into a round shape, and let it rest for about 20 seconds
-
The film is not too thin, which is enough for making sweet bread
-
Divide the dough into two parts, gather one part into a round dough (white dough), and take it to ferment
-
Put dry grapes (grape dough) into another ball, knead it evenly and make it into a round shape, then take it to ferment
-
Cover with plastic wrap and ferment
-
Use the oven to ferment, 50 minutes
-
After fermentation, the volume will be at least 2 times larger
-
Deflate the grape dough and roll it into a round shape
-
Deflate the white dough and roll it into a round shape
-
Divide into 50g portions, deflate and roll into balls, cover with plastic wrap and rest for 15 minutes
-
Just deflate the grape dough and make it round again
-
Deflate the white dough again and roll it into a round shape
-
Put coconut filling
-
Close
-
Make it round and close the mouth downward
-
Line up the two kinds of dough on the baking sheet, cover with plastic wrap for the second fermentation (oven fermentation)
-
After 30 minutes, the fermentation is completed, take it out (dry the oven at this time, preheat 170° with upper and lower heat for 10 minutes)
-
Brush the entire dough with egg wash and sprinkle white sesame seeds on top of the dough with coconut filling to distinguish
-
Put in the preheated oven, middle layer, heat up and down to 170°, 18-20 minutes
