  1. Clean the bamboo stick fish

  3. Heat the pan and add oil, a little more oil. Heat the oil to 60% and fry the fish

  4. Flip and fry the other side until golden brown

  5. Cut some ginger, garlic, shallots, millet pepper

  6. Fry the fish until both sides are golden brown, add onion, ginger and garlic and stir-fry until fragrant

  7. Adjust the appropriate amount of soy sauce and sugar

  8. Add a small bowl of boiling water and simmer for about 5 minutes

  9. Remove the juice over high heat, but don’t remove it too dry. A little juice will make it more delicious

  10. Serve on a plate. Just sprinkle with chopped green onion
