Soak black fungus, wash and shred, cut carrots, onions, ginger into shreds, and cut leeks into sections.

Beat the eggs, add a little cooking wine, stir-fry into small pieces and set aside.

Heat the pan with cold oil, add onions and ginger and stir-fry until fragrant.

Add carrots and fungus shreds and stir-fry for a while. Add mung bean sprouts and continue stir-frying for a while. Add oyster sauce and stir-fry evenly.

Add leeks and stir-fry until fragrant, add appropriate amount of salt and stir-fry evenly.
