  1. Beat one egg, add one third of the spoon of cooking wine, one third of the spoon of water, and a few drops of vinegar and mix well and set aside. (Adding cooking wine can remove the fishy smell of eggs, adding vinegar and water can make eggs more tender, but do not add too much.) A small bowl of water starch is set aside.

  2. Soak and wash the lettuce leaves, add water to the pot, add half a teaspoon of salt and a few drops of oil, blanch the lettuce leaves in boiling water for tens of seconds. (Putting oil and salt into the water can keep the vegetables green and prevent them from turning black due to blanching.)

  3. Take out the blanched lettuce leaves and soak them in cold water immediately. (Soaking in cold water can also keep vegetables green.)

  4. Drain the lettuce leaves and cut into cubes.

  5. Add water to the pot again. After the water boils, stir the water starch evenly and slowly pour it in. Stir while waiting for the pot to boil again. (Water starch becomes gel when heated, which can increase the buoyancy of the soup. It is easy to break the egg drop and float on the surface of the soup. There are also children's shoes that add water starch to eggs and mix well. I have not tried this method and I don't know how effective it is.)

  6. After the water boils, slowly pour the egg liquid into the pot. It is best to pour it in a circle. You can also use two chopsticks to block the edge of the bowl so that the egg liquid flows down the chopsticks, making it easier to control.

  7. Add the lettuce leaves, turn off the heat, add salt and sesame oil and bring to the pot.
