Purple Cauliflower Soup with Tofu
Overview
To make soup tofu today, I first fried the tofu balls, and added purple cauliflower and black fungus, a kind of wild vegetable, to the tofu balls. The seasoning of the soup base is relatively lazy and easy. The soup is cooked with bacon and mushrooms, and Tom Yum soup seasoning is used for seasoning. The stewed soup base is simple to make and delicious. The tofu balls are simmered in it over low heat, and the flavor slowly penetrates into the balls. It is not only delicious, but also suitable for all ages. The purple cauliflower used here is a kind of wild vegetable, which is uncommon and not as famous as shepherd's purse. It was also the first time for me to cook this kind of dish. It was because I participated in an event and visited various wild vegetables, and got to know this vegetable. It has small purple flowers, so it is called purple lily. I took it back and tried it first. Because it was a little sticky after blanching, I thought it would be a good time to make meatballs with tofu, so I made this purple cauliflower soup with tofu. It tastes good together!

Pick and wash, blanch in boiling water and take out

Crush the old tofu and add a little salt and five-spice powder to taste

Chop the black fungus, squeeze out the water from the purple cauliflower and chop it into pieces, put them all into the tofu

Stir well to thicken the tofu. Stir thoroughly and the meatballs will not fall apart when fried.

Dough into balls

Fry in oil pan until surface is golden brown, remove and set aside

Soak the dried mushrooms in advance until soft. Do not throw away the water. Use this water to make soup

Put the bacon into a casserole, add an appropriate amount of ginger slices, stir-fry until the bacon changes color

Slice mushrooms and carrots, remove stems and cut coriander into sections

Fry it with bacon

Add the water used to soak the mushrooms

Add a spoonful of Tom Yum soup. If you don’t have this soup, you can add some pepper and salt to taste

Put the meatballs in, simmer over low heat for half an hour and enjoy.
