Fish stew
Overview
Mom likes fish very much, and she likes braised fish with rich red sauce. But stewed fish is more troublesome, and stewed fish is delicious and easy to make, so I often make it for my mother.

Choose a grass carp of about two pounds.

Remove scales, internal organs and fishy lines on both sides of grass carp, cut into sections and set aside.

Slice the pork belly, lightly stir-fry with oil until golden brown, remove and set aside.

Add a little oil to the original pot, add fish segments and stir-fry until golden

Add onion, ginger, garlic, pepper, aniseed, cooking wine, sugar and vinegar and stir-fry

Heat water to cover the fish segments, add the stir-fried pork belly slices, and simmer for half an hour.

Add salt to taste before serving and sprinkle with chopped coriander.
