  1. Cut green onions into sections, slice ginger, and cut garlic into small pieces for later use (you need to prepare two portions of the same amount of onions, ginger, and garlic)

  2. Wash the pig's trotters (ask the seller to chop them well when you buy them), put cold water into the pot, add onions, ginger, garlic and some white wine, and bring to a boil over high heat.

  4. After removing the floating powder, remove the pig's trotters and put them on a plate. Reserve the soup used to cook the pig's trotters.

  5. Put oil in the bottom of the pot, add chili peppers (can be cut or not cut) into the soy sauce, and slowly stir-fry the peppercorns over low heat until fragrant. (Chili peppers and peppercorns can be washed with water)

  10. After the pig's trotters are colored, pour the soup used to cook the pig's trotters (you can also use boiling water) to cover the pig's trotters. It's best to put more soup. (After adding the soup, you can add some chili and pepper according to your own taste)

  11. After adding the soup, add one spoon of salt, one spoon of chicken essence, one spoon of oyster sauce and one spoon of sugar, and then pour in some white wine. (Add seasonings according to the amount of pig trotters, not too much)

  12. After the water boils, add tangerine peel, bay leaves, cinnamon bark, and angelica. Reduce heat to medium-low and simmer slowly. It should take about an hour and a half. Check a few times to avoid running out of soup. (If the soup is too small, you can add some boiled water)

  13. Reduce the juice over high heat before serving. The time should not be too long. If the soup is small, the juice does not need to be collected. (The photo was not taken well, so let’s just take a look^_^)
