Ingredients: Pork spine

Wash the pork spine and blanch it.

Wash the blanched pork backbone to remove any foam and set aside.

Put water in the pot, add pork spine, soy sauce, cooking wine, onion, ginger, and sugar and stew.

Bring to a boil over high heat and skim off the foam.

Reduce the heat to low and simmer until the bones are crispy and the meat is tender. Add salt before turning off the heat and simmer for another 10 minutes.
