I asked the fish seller to help me organize and cut the fish, rinse it, and drain the water to prevent the oil from splashing out, and the water smelled fishy

Pour a little more oil into the hot pan, then add the fish pieces and fry until both sides turn brown.

Put oil in the pot, add onions and ginger and sauté until fragrant

Add chopped chili pepper (the amount depends on your own ability to eat spicy food)

Put a little water (no need to cover the fish pieces, don't make too much soup), a little sugar, cooking wine, and soy sauce. Gently turn over halfway through the cooking process (during the entire cooking process, except for frying and flipping the fish, do not turn it at other times, so that the fish will be intact), change the other side, cover the pot and cook over medium heat for 5 minutes to taste (slightly increase or decrease the time according to the size of your fish pieces, I personally think the fish pieces are large)

Finally, add chopped green onion. When the soup in the pot is almost gone, it's ready to be taken out of the pot. It doesn’t matter if you have more soup. It’s perfect when mixed with rice.
