Thai Sweet and Spicy Tomato Box
Overview
Pair the ordinary fried eggplant box with a special sauce to give it a very good taste. Although Thai sweet and spicy sauce is commercially available (I haven’t explored how it is made yet), it tastes so good that you will even lick the bottom of the plate clean. Haha——

Tomato box material.

Dipping sauce: Thai sweet and spicy sauce

Wash the eggplant and cut it into eggplant boxes with the top knife: do not cut into segments with the first knife, cut into segments with the second knife;

Add a little salt and marinate the eggplant box for about 5 minutes;

Add soy sauce, cooking wine, salt, minced onion and ginger, 1 tsp dry starch, and 1 tsp water to the meat filling;

Stir evenly in the same direction to form the eggplant box filling;

Take equal amounts of flour and dry starch, add eggs, a little salt and an appropriate amount of beer (water is also acceptable), mix into a fried batter, and let it sit for a while.

Add the meat filling to the eggplant box;

Coat the sandwiched eggplant boxes evenly with a layer of dry flour;

Add fried batter;

Put it into a 50% to 60% hot oil pan and fry;

Fry until both sides are set and remove;

Continue to heat the oil in the pot until it is 70-80% hot, add the fried eggplant boxes and fry again until both sides are golden and crispy;

Remove and drain;

Arrange on plate and top with sweet and spicy sauce.
