Wash the oysters.

Add the secret weapon - fish sauce, about 2 tablespoons of fish sauce. Remember not to add any more salt, the fish sauce itself is salty. Adding fish sauce brings out the umami flavor of the oysters!

Add a little cooking oil, a little sweet potato flour, a little chicken essence, a little pepper, and three eggs.

Stir clockwise until evenly mixed

Start the oil pan

Be careful not to make the fire too big, just medium to small fire

Add the oyster egg mixture that you just stirred evenly into the pot in three batches

Fry until both sides are golden

After frying, sprinkle coriander on top of the oysters and serve!
