Shepherd's Purse and Shrimp Breakfast Pancakes
Overview
The shepherd's purse grown by my mother-in-law was very tender, so I bought some shrimp, peeled the shrimp, made wonton fillings with the shepherd's purse, and wrapped the shepherd's purse and shrimp wontons. There is still half a bowl of flame left, add some flour and eggs, and make a pancake for breakfast. It is also excellent.

Peel and devein the prawns, wash the shepherd's purse, chop into pieces, add all the ingredients and stir evenly. Mine was leftover filling from making ravioli.

Beat in 2 eggs and mix well.

Add flour and mix evenly into batter. If the batter is too thick, add some water or milk. Looking at the picture, I like to eat soft dough, so I would rather make it thinner.

Grease a non-stick pan with oil and turn on low heat.

Pour in an appropriate amount of batter. Do not wait until the pot is very hot to pour the batter, otherwise it will solidify too quickly and the batter will not have time to spread.

Turn the pan and use a spatula to help spread the batter into a round shape.

Fry until the surface is solidified and the pancake can be turned over when sliding in the pan. Fry for a while until there are slightly charred spots.

Cut into pieces and serve.
