Cut off the roots of the enoki mushrooms and divide them into small strands.

Blanch in boiling water for 1 minute, then remove and drain.

Add salt, sugar, oyster sauce, light soy sauce, sesame oil and appropriate amount of water to the bowl and stir evenly.

Add vegetable oil to the pot, add chopped pepper and stir-fry until fragrant.

Pour in the sauce and boil for 20 seconds then turn off the heat.

Pour the sauce over the enoki mushrooms and sprinkle with chopped green onion.
