Blanch the ribs with water, drain and set aside

Mix cooking wine, salt, soy sauce, vinegar, sugar and appropriate amount of water to make a juice and set aside

Add appropriate amount of oil to the pot and sauté the ginger slices until fragrant

Stir-fry the lower ribs until the surface is golden

Pour in the prepared sauce. The soup is basically at the same level as the ribs or covers the ribs. Bring to a boil over high heat, then turn to medium heat and simmer for a while
