Spicy frog legs
Overview
The frozen and large-scale farmed chicken legs are in no way related to steaming, sliding and stir-frying. I said to use Lao Gan Ma, but also said that Lao Gan Ma was suspected of containing harmful health indicators, so I simply used the method of making spicy chicken. Basically, the raw materials used were raw materials. The peppers were grown by myself and kept after being dried in the sun, so they could be used. Because I didn’t want the dish to be too spicy, I reduced the amount of chili pepper. This dish is a good choice whether it is served with rice, wine, entertaining guests, or a hard New Year dish.

Chop the ginger and garlic, separate the white and green green onions, and chop the white green onions;

Use a small pot, put cold water in it, put in the frog legs, scoop out the filtered water as soon as the water boils, you don’t need to blanch it for too long, the main thing is to remove the blood;

Use a small pot, add oil, turn on medium-low heat, wait until the oil is 30 to 40% hot, that is, put a small piece of meat into the oil and you can see it bubbles, add the frog leg pieces, and shallow fry until light yellow;

While frying the frog legs, use another pot to stir-fry the chili peppers and Sichuan peppercorns until fragrant and then turn off the heat;

Then increase the oil temperature by 70 to 80%, add in the frog legs, fry until deep golden brown, remove and filter the oil;
