Spicy Stir-fried Snails
Overview
I wanted to buy snails to eat, but I couldn't. There happened to be a store selling them. I went home and tried stir-frying one, but I haven't tried it.

After soaking the snails and spitting out the sand, blanch them and cook them for a little longer, four or five minutes.

Heat oil in a pan.

Add minced garlic, chopped green onion, dried chili pepper, hot pepper, and Thai pepper segments and stir-fry until fragrant.

Add oyster sauce and Yipinxiang soy sauce and continue to stir-fry until fragrant.

Add the snails and stir-fry evenly.

Add water (if possible, add beer, I don’t have much beer at home, so I have to save it...).

Since there was no beer, I put in some cooking wine to make up for it. After boiling, add appropriate amount of salt. Cook it to 80%.

Finally add coriander and stir-fry evenly.

Remove from the pan.
