Huanggui Persimmon Cake
Overview
Huanggui persimmon cake, a famous snack in Xi'an Huimin Street, is made from Huojing persimmons produced in Lintong District. The persimmon cake baked with fire crystal persimmons is golden in color, sticky and sweet, and fragrant with yellow cinnamon.

Prepare materials.

Place walnut kernels, peanut kernels, melon seed kernels, white sesame seeds, and black sesame seeds into the baking tray respectively. Preheat the oven and bake each type of nuts for 2 minutes until the nuts are cooked and slightly brown on the surface.

Chop the nuts (not too finely chopped) and set aside.

Stir the chopped nuts with sugar, sugar-osmanthus and flour.

Wash the persimmons with clean water, remove the stems, peel off the skin and press into puree.

Add a little flour to the persimmon puree and stir.

Stir the flour and persimmon puree evenly. Do not add too much flour. The dough should be soft.

Let the kneaded dough rest for 20 minutes. Sprinkle dry flour on the cutting board. Take a piece of dough and coat it with dry flour.

Use your hands to roll the dough into a long roll.

Divide into doses. Put dry noodles on your hands, take a dollop and flatten it.

Wrap the mixed stuffing, close the edges and roll into a round shape to make a green persimmon cake.

Wrap all the biscuits in turn.

Put a little oil in the pan. When the oil in the pan is 50% hot, add the cake base.

Put in the cake base and press lightly to flatten it. Fry over medium-low heat until the surface of the cake base turns golden brown and turn over.
