Overview
The meat used this time is beef, but you can also use pork. I made homemade pickled beans and learned from my mother. I will share it with my friends next time I have the opportunity.

-
Use a knife to mince the beef, the more minced the better, the meat will be minced when stir-fried, and the minced meat made by the meat filling machine will be chewy and more delicious. Mince onion, ginger and garlic.
-
After the pot is hot, just put a little bit of oil, a small amount, a small amount, a small amount, and then put a mold for making eggs. There are many of these online, with various shapes, and then crack the eggs into the mold. Put a few drops of water on the side of the eggs and cover the pot. The eggs made in this way will be very tender and smooth. Make sure to use low heat, low heat, low heat.
-
While frying the eggs, wash the sour beans. Then when the eggs are ready, take them out and set aside.
-
Put oil in a pot over low heat and sauté the pepper until fragrant, about a minute or two until the aroma comes out.
-
Then add the onion, ginger and garlic and continue to simmer over low heat until fragrant.
-
Friends who are afraid of eating Sichuan peppercorns can pick out the Sichuan peppercorns at this time, add minced meat and stir-fry slowly over low heat, otherwise the minced meat will not easily fall apart after being cooked quickly.
-
After the minced meat is fried, add cooking wine, dark soy sauce to color, then white sugar, light soy sauce, oil and stir-fry evenly, add homemade bean paste (you can add bean paste, chili sauce, chopped pepper sauce) and some Laoganma, so that the two sauces taste rich and layered together.
-
After stir-frying, add some hot water (water vegetables are not too hot when cooking), bring to a boil over high heat, then simmer slowly until the flavor is absorbed. After stewing for a while, add some five-spice powder. No need to add salt, because the bean paste has salt, and the sour beans themselves are salty. If you are worried that the noodles are not salty, you can just add some salt to the water when cooking the noodles. The noodles we made are salty just right, so we don’t need to add any more salt.
-
When stewing sour beans, use a soup pot to cook the noodles and serve them out with the soup when they are cooked. (Turn off the heat and scoop out the noodles when they are about eighty-nine years old, so that the noodles are chewy)
-
Finally, it is served with fried eggs and pickled beans with minced meat. Add some coriander or green onions to make it more fragrant and beautiful. I just don’t have any at home. Stir evenly and eat, it's sour and spicy for appetizers.
