Wash the small potatoes, mine are not very small, you can choose smaller ones. For easier flavoring, you can use a toothpick to poke a few small holes in the potatoes.

Prepare the green vegetables, wash and cut into sections. No need to cut the cilantro.

Scallions and ginger slices.

Put oil in the pot, sauté the onion and ginger, add the potatoes and fry for a while.

Add cowpeas, celery, and coriander in turn and stir-fry until soft.

Add oyster sauce.

Add light soy sauce.

Add water.

Finally, put the peppers on top of the ingredients and simmer until the potatoes are soft.
