Garlic roasted pork ribs
Overview
Garlic is crisp and refreshing when eaten raw or pickled, and it is also very good to cook with garlic. Especially using garlic to cook meat dishes - roasted fish, roasted meat, roasted ribs, not only can it remove the fishy smell and increase the freshness, but also greatly improve the nutritional value of the whole dish. For ribs and garlic, be sure to choose purple-skinned garlic;

Soak the ribs in water for 3 to 4 hours in advance, changing the water 3 or 4 times to soak out the blood and impurities;

Wash, remove and drain, and use kitchen paper or sterilized towels to absorb the water;

Add oyster sauce, rice wine, scallions, ginger slices, and garlic slices, mix well and marinate for about 15 minutes;

Peel the garlic cloves, wash and dry them;

Cut green onion leaves into cubes and set aside.

Heat the wok, add the garlic cloves to the hot pot with cold oil, stir-fry slowly over low heat until the surface of the garlic cloves is golden brown, take it out and set aside;

Leave the crude oil in the pot, add the marinated ribs and the onions, ginger and garlic for pickling, stir-fry over low heat until the ribs change color;

Add an appropriate amount of boiling water to cover the ribs;

Add Japanese teriyaki sauce;

Add freshly ground pepper;

Turn to high heat and bring to a boil, then reduce to medium to low heat, cover the pot and simmer;

Simmer until the soup is thick, add fried garlic cloves, stir-fry over high heat to reduce the juice;

Turn off the heat, add diced chives, and serve.
