Sausage Fried Rice
Overview
I made this during the March 3rd holiday. We have a little guest at home and there are no eggs in the refrigerator, so we can’t go meat-free or egg-free.

Cut the sausage into small pieces.

Cut the carrots into small pieces.

Heat oil in a pan, add carrots and sauté over low heat. My family is used to eating soft carrots, so we fry the carrots first.

After the carrots are sautéed until soft, add the sausage and stir-fry.

After the sausage is cooked, add cold rice. It is easier to stir-fry if cold rice is pressed with a spoon before being put into the pot.

Add salt, light soy sauce, dark soy sauce and oyster sauce and stir-fry until fragrant.
