Stir-fried shredded pork with green pepper and fungus
Overview
When the weather gets hot, I like to make simple home-cooked stir-fries. Today I made a shredded pork with green pepper and fungus. Pork leg meat contains high-quality protein and fatty acids needed by the human body. It can provide heme (organic iron) and cysteine that promotes iron absorption, and can improve iron deficiency anemia. Black fungus is rich in protein, polysaccharides and multivitamins. It is rich in nutrients and can effectively prevent iron deficiency anemia, thrombosis, arteriosclerosis and coronary heart disease. It also has anti-cancer effects. Soak the dried fungus in water in advance

Heat a pan with a little oil, add the marinated shredded pork and stir-fry until the surface turns white, cut into pieces and set aside

Just stir-fry shredded pork in the pan, add a little rapeseed oil, add shredded ginger and minced garlic, stir until fragrant

Add shredded onions and sauté until the edges of the onions are browned and fragrant

Add shredded carrots and stir-fry

Add shredded fungus and stir-fry

Pour in the chopped pork shreds and stir-fry evenly
