Pick off the yellow leaves and roots of the spinach and wash it in clean water. Because spinach is not a seasonal vegetable, it is inevitable that there will be residues of pesticides and fertilizers, so it is best to soak it in a vegetable cleaning agent or soak it in baking soda water for a few minutes to remove the residue

Remove heads, peel and clean the shrimps

Use a knife to slit the back of the shrimp with the shells removed and take out the shrimp thread: This step cannot be omitted, otherwise everyone will not be happy eating

Clean the deveined shrimps and set aside

Pour water into the pot and bring to a boil. Put the cleaned spinach into the boiling water and blanch it for 2-3 minutes. Don’t blanch the spinach for too long to avoid it being overripe and turning yellow

Quickly soak the blanched spinach in ice water: Put the blanched spinach in ice water to make it more green

Then blanch the shrimps in boiling water

Remove the blanched shrimps and drain them

Mix olive oil, scallion oil, cooked sesame seeds and appropriate amount of salt to form a juice. Add the cooked shrimps into the juice, mix well and remove

Then put the spinach and cooked white sesame seeds into the juice and stir evenly: If you find that the juice is too light, you can add some salt
