Baked eggs with leeks and water

Two eggs.

Pour into a bowl and break up.

Pour into a bowl of water and stir briefly.

Cut leeks into small pieces.

Put in the egg liquid and a little salt.

Stir well.

There is no need to put oil in the pot, just pour the egg liquid directly into it and turn on medium-low heat.

When the egg liquid has solidified slightly, use a spatula to gently push it away from the bottom of the pot.

Push while solidifying to avoid sticking to the bottom. The batter is unpalatable.

When all the egg liquid has solidified into lumps, turn off the heat. It doesn't taste good when it's old, but it tastes good when it's tender.

Season with appropriate amount of salt, light soy sauce, mature vinegar and sesame oil. If you like spicy food, sprinkle with millet pepper.
