Soak the pork bones in the bleeding water with cold water, put them into a cold water pot, cook them over high heat to remove the foam, and wash them with warm water.

Cut green onions into sections, slice ginger, and prepare other seasonings.

Pour cooking oil into the pot, add rock sugar, and stir-fry over low heat until the rock sugar melts.

Add the bones and stir-fry until evenly colored.

Add the bean paste, light soy sauce, dark soy sauce, and cooking wine and continue to stir-fry for about 2 minutes. Add the scallions and ginger slices.

Pour hot water into the electric pressure cooker, add seasoning packet and salt.

Simmer for 50 minutes and remove the green onion and ginger slices.
