Cut the tofu into small pieces.

Chop the ginger, onion and garlic.

Cut the Bazhen ingredients.

Boil water in a pot, pour in the Bazhen ingredients and blanch for half a minute, remove and drain.

Heat 50% oil in a pot, add tofu and fry over low heat until lightly browned, remove and control the oil.

Leave the base oil and sauté the ginger, onion, and garlic until fragrant. Add salt, soy sauce, oil, sugar, and pepper and stir-fry evenly. Add an appropriate amount of water and bring to a boil over high heat.

Add tofu and cook for 5 minutes.

Add Bazhen and stir-fry evenly until the soup thickens.
