Prepare the raw materials: wash and cut the hairtail fish.

Marinate the hairtail with salt, cooking wine, and pepper for 15 minutes.

Mix flour, cornstarch, baking powder (I used double-action baking powder), and water into a thinner batter.

Put the marinated hairtail into the batter and coat it with a thin layer of batter.

Add an appropriate amount of oil to the pot. When it is 50-60% hot, add the battered hairtail and fry it. Take it out when both sides are golden brown.
