Spicy Chicken
Overview
Spicy chicken is a classic Sichuan dish. It is generally made with whole chicken as the main ingredient, plus dried chilies, Sichuan peppercorns, salt, pepper, chicken essence and other ingredients. Although it is the same dish, each place has its own characteristics. Spicy chicken has different characteristics due to different preparation methods in different places, and is deeply loved by people all over the world. This dish has a bright brown-red color and a strong spicy flavor.

Prepare a tender chicken

Prepare peppercorns, dried chilies, rock sugar, garlic, star anise and garlic sprouts

Cut the chicken into small pieces (as small as possible)

Heat oil in a pan

When the oil is 70% hot, add the chicken pieces and fry them briefly

Add salt, dark soy sauce, chicken essence, oyster sauce, star anise, pepper, pepper and ginger powder to taste, add rice wine, stir-fry evenly, add a little water and simmer for 3 minutes,
