  1. Prepare a pound of pork belly, and first use fire to remove the hair on the skin.

  3. Pour water into the pot, put the pork belly in cold water, add cooking wine, peppercorns, green onion segments, ginger and bring to a boil over high heat. Skim off the foam. After boiling, turn to medium heat and simmer for 20 minutes, then turn to low heat and simmer for 10 minutes.

  4. In the middle, we cut the green and red peppers into diamond shapes, slice the garlic and ginger, and cut the garlic sprouts into diagonal sections for later use.

  5. It should be enough until the chopsticks can be inserted easily from the leather side and no blood comes out.

  6. Remove the pork belly and let cool. Cut into slices along the grain of the meat, otherwise the minced meat will not taste chewy after it is made. Cut garlic sprouts with a diagonal knife, remove seeds from green pepper and cut into diamond-shaped slices, slice ginger and garlic and set aside. Remember not to pour the soup used to cook the meat, it will be used for stir-frying later.

  7. After heating the oil over medium heat, place the pork belly slices in a colander, add a splash of water to the previous broth, and break up the meat slices.

  8. Pour into the pot and stir-fry until the fat flows out and the meat changes color.

  9. Add peppercorns and bean paste inside and stir-fry to bring out the aroma of red oil and peppercorns.

  10. Then add sweet noodle sauce, bean drum, soy sauce, and cooking wine and stir-fry until fragrant. Then add garlic sprouts and green peppers and stir-fry until raw.
