Yam dumplings
Overview
I usually like to eat big meat dumplings, but my diet lately is more health-conscious, so I made some yam dumplings on the weekend. They tasted pretty good. You guys can give it a try!

Wash and crush a section of yam into puree.

Chop the pork belly into pieces.

Chop the ginger slices, add the minced meat and mashed yam into a basin.

Sprinkle 3 tablespoons of salt and 2 tablespoons of pepper and stir evenly.

Wash and chop green onions.

Mix well with the previous minced meat.

Add appropriate amount of water to the flour.

Knead repeatedly until smooth.

Pinch a handful and flatten it, haha. I forgot to buy a rolling pin, so I used chopsticks instead. I’m probably the first person in history! Use chopsticks to roll it out thinly, making it slightly thicker in the middle and thinner on the outside.

Put the stuffing in the middle, pleat it into flower rows and make it look like an ingot. Of course, the wrapping methods vary from place to place, so I won’t teach you how to wrap them.

Heat a pot of hot water, add ginger slices and salt and cook the dumplings.

Chop the garlic and add the chopped raw red pepper.

Pour in 4 tablespoons of cold vinegar, 3 tablespoons of sugar, and 2 tablespoons of dark soy sauce, stir evenly, and make a flavored dish. Of course, mochi can be customized according to your own taste.

Place the dumplings on a plate after taking them out of the pan.

I made the remaining noodles into Cat Ear Noodles, using bone broth and eating them with dumplings. It tastes great!
