Remove the internal organs from the hairtail, scrape off the skin, wash and cut into sections, dry and set aside

Add eggs, starch, a little salt, and pepper powder and mix well

There is less starch, add more and mix well

Put all the remaining ingredients together and pour into a bowl to make a sauce and set aside

Pour more oil into the pot and heat it

Add hairtail and fry

Turn one side golden

Fry both sides until golden brown

Pour in the sauce and stir-fry until flavourful

Turn off the heat when the soup is reduced
