Overview
Oil cake, a Shaanxi specialty snack. Xi'an's local oil cake is different from Sanyuan bubble oil cake. It is softer, waxier, crispier and incredibly delicious~

Boil 750g of water.

Add 500g of plain flour and mix well.

Cover the pot and simmer for 5 minutes.

Add appropriate amount of flour and vegetable oil to the hot dough.

Knead into a smooth dough and let it rest for 1 hour. At least an hour~

This is the time to make the filling. Fry the raw flour, a little is enough, I used double the amount here.

Add cooked sesame seeds, chopped walnuts, and white sugar, mix evenly to make a filling.

After the dough has rested for enough time, it is ready to be manipulated~ Take a piece and form it into a ball~

Flatten~

Wrap in fillings. Push it up like a moon cake.

Flatten slightly.

Fry in pan. The oil temperature does not need to be too high, fry slowly over medium-low heat until golden brown on the outside.
