  3. First wash the wing roots (it’s best to make two cuts to absorb the flavor), put cold water into the pot, bring to a boil over high heat, cook for 2 to 3 minutes, then turn off the heat and take it out

  6. Pour in the wing root and stir-fry over medium heat for a while, then add the ginger slices, green onion knots, star anise and bay leaves and continue to stir-fry for about 1 minute

  7. After stir-frying until fragrant, add oyster sauce, fresh soy sauce, and dark soy sauce, stir-fry evenly, then pour in the cocktail, cover the pot and cook over medium-low heat for about 30 minutes

  8. Squeeze in a little lemon juice 2 minutes before serving (you don’t have to put it in if you don’t have it)

  9. If the saltiness is not enough, add a little salt and then heat until the soup thickens
