Red Date Muffin Cake
Overview
Muffin cakes are very simple to make. They mainly use baking powder as a baking enzyme. There is no need to beat eggs, which saves time and effort. I believe that even a novice baker can succeed. I have made muffin cake once before, but it was not very successful because I did not add baking powder. This time I readjusted the recipe and added red dates. The baked cake was soft, sweet and very delicious.

No-wash Xinjiang red dates chopped

Soak in milk for 20 minutes (you can do it without soaking)

Crack the eggs into a container, add sugar and mix well

Pour in the corn oil and mix thoroughly

Weigh the flour, cornstarch, baking powder and baking soda separately and mix well

Sieve twice

Sift into the egg liquid

Cut up and down and mix until there is no dry powder left

Add the chopped red dates and the milk soaked in the dates to the egg paste

Pour the cake batter into a small paper cup

Preheat the oven to 170 degrees for 3-5 minutes and put the baking sheet into the oven
