Beer roasted pork trotters

Prepare the raw materials (let the pork stall owner chop the pig trotters into small pieces directly)

Put the pig's trotters in a pot with cold water, add cooking wine and bring to a boil over high heat, skim off the floating foam and cook for three to five minutes and take it out.

Wrap star anise, bay leaves, cumin and other small spices in gauze.

Remove and drain.

Heat the oil in the pan, add the drained pork trotters, onion, ginger, dried chili, rock sugar and other seasonings.

Stir-fry until the rock sugar melts, the onion and ginger are fragrant, and the pig's trotters are slightly colored. Pour in cooking wine to remove the fishy smell, and add dark soy sauce to adjust the color.
