I have been buying matcha powder for a long time, and I have always wanted to make a matcha cake with cream, but I am lazy and thought the process would be too troublesome, so I have put it off! I got off work early and came home early yesterday, so I started to toss again... The sun is warm and I enjoy this beautiful and quiet afternoon alone!

Separate the egg whites and yolks into a container, add 24 grams of fine sugar to the egg yolks

Use a hand mixer to beat evenly, do not beat

Add milk, salad oil, stir evenly

Sift together the low-gluten flour, baking powder, and matcha powder, and use a rubber spatula to gently mix it up and down. Do not over-mix to avoid gluten formation

Use an electric mixer to slowly beat the egg whites until large bubbles appear. Add 1/3 of the fine sugar

Beat the egg whites until they turn white, then add 1/3 of the sugar and beat at high speed. When the egg whites are thick, add the remaining 1/3 of the sugar

Whip until there are curved sharp corners when you lift the whisk, which means it has reached wet foam. Just beat until it is wet!

Add 1/3 of the egg whites into the matcha batter and mix gently up and down. Mix well and then add the other 2/3 of the protein paste in portions

After mixing, pour into a baking tray lined with baking paper

Smooth the surface with a scraper and shake it a few times to remove any big bubbles. Bake it in a preheated oven at 170 degrees for about 15 minutes. After baking, turn it over and peel off the oil paper. Place a piece of plastic wrap under the cake for easy rolling
