Mushu Rou is a stir-fried dish based on fungus, eggs and pork. It is a very common Northeastern dish!

Soak the fungus for a few hours, then wash and set aside.

Slice the lean pork, add cooking wine, starch, salt, and pepper and marinate for ten minutes.

Cut carrots and cucumbers into diamond-shaped slices.

Slice onions and garlic.

Heat hot water in a pot, blanch the fungus and carrots separately, let cool and set aside.

Beat the eggs, add a little salt and mix well. After the oil in the pan is hot, scramble the eggs and set aside.

Add a little oil to the pot, fry the meat slices until cooked, add onions and garlic and stir-fry until fragrant.

Add cucumber, fungus, and carrot and stir-fry.

Add soy sauce, salt, sugar, pepper, and chicken essence to taste.
