Mushu Rou is a stir-fried dish based on fungus, eggs and pork. It is a very common Northeastern dish!

Steps

  1. Soak the fungus for a few hours, then wash and set aside.

  2. Slice the lean pork, add cooking wine, starch, salt, and pepper and marinate for ten minutes.

  3. Cut carrots and cucumbers into diamond-shaped slices.

  4. Slice onions and garlic.

  5. Heat hot water in a pot, blanch the fungus and carrots separately, let cool and set aside.

  6. Beat the eggs, add a little salt and mix well. After the oil in the pan is hot, scramble the eggs and set aside.

  7. Add a little oil to the pot, fry the meat slices until cooked, add onions and garlic and stir-fry until fragrant.

  8. Add cucumber, fungus, and carrot and stir-fry.

  9. Add soy sauce, salt, sugar, pepper, and chicken essence to taste.
