Chop the chicken into small pieces and put it into the pot, add ginger slices, blanch in cooking wine for 2 minutes, remove, wash and drain.

Peel the potatoes and cut into small pieces, fry over low heat until lightly browned and set aside.

Heat oil in a pan, add rock sugar and stir-fry until it turns brown, add chicken and stir-fry until coloured, add ginger and garlic and stir-fry evenly.

Add soy sauce, oil, cooking wine, dark soy sauce, stir-fry evenly, add an appropriate amount of water, bring to a boil over high heat, then reduce to low heat and simmer for 5 minutes.

Add potatoes and simmer for 10 minutes.

Cook until thickened and add salt to taste.

Remove from pan and sprinkle with chopped green onion.
